Join us for an intimate and flavorful evening celebrating extra virgin olive oil, storytelling, and our Midwest Mediterranean tradition co-hosted by Mr. Samuel Wai and Dr. Peter Schultz.
Peter’s journey into olive oil began not in a kitchen, but in Athens, Greece, while he was pursuing his PhD. There, he formed a lasting friendship with Eugene Ladopoulos, whose family had tended olive trees near ancient Sparta for generations. What began as an afternoon spent labeling bottles from Eugene’s first batch of “liquid gold” grew into a transatlantic collaboration shaped by shared values: care for creation, respect for tradition, and an uncompromising commitment to quality.
Joining Peter is Sam Wai, a well-traveled local food and beverage connoisseur deeply involved in the Fargo–Moorhead music and wine scene. The two self-described hedonists have been working and traveling together for over a decade. Sam brings a thoughtful, community-driven perspective to the evening, connecting global flavors with local culture and creativity.
During this guided tasting, Peter and Sam will share the story behind the oil—its origins, harvest, and craftsmanship—while leading guests through a sensory exploration of exceptional extra virgin olive oil, sampled alongside freshly baked bread from Falls Baking Company. In other words: We're gonna eat!
